Recipe: Seafood Pesto Pasta

Busy weeknights call for recipes that one can prepare in thirty minutes or less. This dish just requires frozen seafood mix, a bottle of good quality pesto sauce and fresh basil leaves from the garden. I add a tablespoon of olive tapenade to give it a nice, salty kick.

RECIPE: SEAFOOD PESTO PASTA

Ingredients:

  • Chopped sweet onions and garlic
  • Chopped red bell pepper
  • 1 tbsp. olive tapenade
  • Chopped fresh basil leaves (1/3 cup)
  • Salt and pepper to taste
  • 1 cup frozen seafood mix (thaw before using)
  • Chili flakes (optional)
  • Cooked spaghetti pasta (al dente)

Directions:

1. Saute onion and garlic in olive oil.
2. Add red bell pepper.
3. Add seafood mix and stir until cooked. Add 1 tsp tapenade and stir well.
4. Stir in bottled pesto sauce and mix well. 
5. Season with salt, pepper and chili flakes.
6. Combine with spaghetti pasta. 
7. Serve hot. Buon appetito!
