Recipe: Healthy Strawberry Meringue Pie

Strawberry Meringue Pie Recipe
Ingredients:
- 3 egg whites
- 1/4 tsp baking powder
- 1/4 tsp. salt
- 1/4 tsp cream of tartar
- 1 cup sugar
- 3/4 cup quick-cooking oats
- 1/2 cup chopped walnuts
- 1/2 tsp vanilla
- 1 (10 oz) package frozen strawberries, thawed
- 1 Tbsp cornstarch
- 1 cup light whipped topping
Beat egg whites, baking powder, salt, and cream of tartar until stiff. Slowly beat in sugar until stiff but not dry. Combine oats and walnuts in a separate bowl, then blend into egg white mixture. Fold in vanilla. Spoon merimgue into a 9-inch pie pan, spreading meringue up the sides to form a crust. Bake at 325 F for 25 minutes or until lightly browne; cool.
To make a filling, drain strawberries over a saucepan to collect juice. Blend cornstarch into juice and cook over medium heat until thickened. Cool slightly and stir in strawberries. Spoon into cooled meringue crust. Cover loosely and chill for several hours. Serve with a dollop of whipped cream.
