Smiling Baby Pancakes

Wanna be happy? Have a smiley baby pancake!

This cute pancake recipe is from Sara Perry's cookbook  Summertime Treats: Recipes and Crafts for the Whole Family. I used a squeeze bottle to outline the pancake eyes and smile.  Try it!


Smiling Baby Cakes Recipe

Ingredients:

1 1/2 cups all purpose flour
3/4 cup sugar
1 1/4 tsp baking powder
1/2 tsp salt
2 eggs
1 cup milk
2 tbsp salad oil

Directions:

1. In a large bowl, combine flour sugar, baking powder and salt. In a smaller bowl, whisk together eggs, milk and oil. Pour the egg mixture into the flour mixture and mix until smooth. Set aside.

2. Coat a griddle with cooking spray and preheat to 350F.

3. To make smiling baby cakes, use 1 tablespoon batter to outline a smile and two dots for eyes  on the heated griddle. Once the batter begins to bubble and dry, pour 1/4 cup batter around the eyes and smile and fill in.
